Roast Leg of Lamb

Ingredients

  • 1 Leg of Lamb
  • 2-3 Sprigs of Rosemary
  • 2 tbls. Brown Spicy Liquid Mustard
  • 6 Cloves of Garlic (cut each into 4 pieces)
  • 6 tbls. Olive Oil
  • Salt and Pepper to Taste

Directions

  1. Preheat oven to 475*.
  2. Rub leg with mustard and season with salt and pepper.
  3. Make small incisions with knife and insert garlic pieces and rosemary.
  4. Place on a roasting rack above tray and drizzle with olive oil.
  5. Cook for 1 hour.  After 30 minutes lower temperature to 460* continue to bake for the last 30 min.
  6. Insert a knife into thickest part of leg, meat should be pinkish in color.
  7. Remove from oven and let sit for 15 minutes.  Serve and Enjoy!
